Refrigerating potatoes increases their sugar content, resulting in a sweeter taste and the potential formation of acrylamide when cooked at high temperatures. Instead, potatoes should be stored at room temperature in a well-ventilated container, such as a basket, paper bag, or cardboard box. Whole, uncooked potatoes can last up to two weeks when stored properly. Cut potatoes should be submerged in cold water and refrigerated, lasting approximately 24 hours.
Keep potatoes away from heat, moisture, and light to maintain freshness. Avoid storing them near the stove, oven, or other appliances that generate heat. Store potatoes separately from other fruits and vegetables, as they produce ethylene gas that can accelerate ripening. Onions, in particular, should not be stored near potatoes due to their ethylene production and potential to cause decay.
Regularly check potatoes for any signs of spoilage, such as foul odor or soft spots. Discard any spoiled potatoes to prevent contamination. Remember to wash potatoes thoroughly before cooking, regardless of storage method.
