Ingredients:

* Two large sweet potatoes
* 200g good quality dark chocolate

Optional Frosting:

* 100g dark chocolate
* Half a cup of coconut milk

Instructions:

1. Peel the sweet potatoes and chop them into small chunks. Microwave them with a little water until tender. Alternatively, microwave the whole peeled potato for five minutes, rotating halfway through. When fork tender, chop the potato into small chunks.
2. Set up a heatproof bowl over a pan of boiling water, ensuring the bowl doesn’t touch the water. Break the dark chocolate into pieces for even melting and stir continuously until it becomes thick and glossy.
3. Combine the melted chocolate with the cooked sweet potato in a blender until all visible potato lumps are gone.
4. Grease a standard-sized round cake tin with butter and line it with parchment paper.
5. Carefully transfer the cake mixture into the prepared tin and level the top with a spatula.
6. If you’re adding frosting, melt another 100g of chocolate in the same heatproof bowl. Combine the melted chocolate with the cold coconut milk until well combined. Pour the frosting over the cake mixture in the tin.
