Jamie Oliver’s One-Cup Pancakes: A Quick and Easy Family Breakfast

Pancakes, with any combination of toppings, are a classic breakfast that families adore. Jamie Oliver makes this beloved dish even easier with his one-cup version, serving four people with just six ingredients. The best part? This “hero batter” can be transformed into four different breakfast delights: classic crepes, fluffy American pancakes, waffles, or pancake sandwiches.

One-cup pancakes recipe

Ingredients:

* One large free-range egg
* One cup of self-raising flour
* One cup of milk
* 200 g blueberries
* Olive oil
* Four tablespoons natural yoghurt

Instructions:

1. Crack the egg into a large mixing bowl and combine it with the flour, milk, and a pinch of sea salt. Whisk the ingredients until the batter is smooth, then gently fold in the blueberries.
2. In a large non-stick frying pan, heat 1⁄2 a tablespoon of olive oil over medium heat, tilting the pan to spread the oil evenly.
3. Pour a few ladles of batter into the pan, making sure to leave space between each one for spreading. Each ladleful will form one pancake, so you’ll need to cook them in batches.
4. Cook the pancakes for one to two minutes, until bubbles appear on the surface and the bottoms are golden. Carefully flip them over.
5. Once the pancakes are golden on both sides, transfer them to a plate.
6. Repeat the process with the remaining batter, adding more oil to the pan as needed.
7. Serve the pancakes hot, with some yoghurt and fresh berries on top, if desired.
