Craving a delicious and quick meal? Look no further than this flavorful mushroom tart recipe from The Mushroom Bureau. This dish is perfect for serving four people, making it ideal for family dinners or entertaining friends. It’s also a meat-free option, so it’s great for those looking to cut down on their meat intake.

Here’s how to create this tasty mushroom tart:

Ingredients:

* Olive Oil
* Two Garlic cloves
* One bunch of Thyme
* 500g Button mushrooms
* Knob of butter
* 300g Spinach
* 150g Cream Cheese
* 100g Strong Cheddar
* Pre-rolled puff pastry

Method:

1.

Prepare the filling:

In a frying pan, sweat the diced onion and garlic in olive oil for 2-3 minutes until softened. Add the quartered mushrooms and continue frying. While the mushrooms cook, strip the thyme leaves and add them to the pan. Wash and blanch the spinach in boiling water for 10-20 seconds, then refresh in ice-cold water and squeeze out excess water. Add the blanched spinach to the pan, mix well, and season with salt and pepper.

2.

Prepare the pastry:

You have a couple of options for the pastry. For a traditional tart, roll out the puff pastry, score a border around the edge, and lay it on a baking tray. Spread a generous amount of cream cheese over the pastry, distribute the mushroom filling, grate some cheese on top, and bake in the oven at 180°C for 15-20 minutes, or until golden brown.

3.

Pastry Pockets:

For a different presentation, create pastry pockets in a circle or rectangular shape. For circle pockets, cut a circle of pastry, fill half with cream cheese, mushroom mix, and cheese, fold over, seal with a fork, brush with egg wash, and bake. For rectangular pockets, cut two rectangles of pastry, fill one with the filling, top with the second rectangle, seal with a fork, brush with egg wash, and bake.

Serve your mushroom tart with a salad or vegetables for a complete and satisfying meal. Enjoy!
