In his latest culinary creation, the renowned chef puts a unique twist on the classic whoopie pie, infusing it with the scrumptious taste of carrot cake.

Oliver showcased his innovative take on the whoopie pie in a recent Instagram Reel and YouTube video, describing it as “not a cookie and it’s not a cake.” The highlight of this delectable dessert? It’s crafted using an air fryer.

In his video, Oliver shares that while he chose carrot for this recipe, there’s ample room for creativity, suggesting beetroot as an alternative or experimenting with different fillings for the whoopie pies.

His recipe, which can be easily made using an air fryer, has been hailed as a “thing of joy” by the famed TV chef. Oliver’s social media post was accompanied by an enthusiastic caption: “Let me start off by saying this is an air fryer recipe… Yes, I’ve embraced the air fryer and taken two things that I love….the great American whoopie pie and carrot cake to create something pretty special!”

Here’s the full recipe for Jamie Oliver’s Air Fryer Carrot Cake Whoopie Pies:

Ingredients:

* 100g white chocolate
* One orange
* 165g full-fat cream cheese
* 85g unsalted butter
* 100g stem ginger balls in syrup
* 200g self-raising flour
* 100g golden caster sugar
* One tsp ground cinnamon
* Half tsp ground cardamom
* 200g carrots
* Handful of pistachios
* Half tsp bicarbonate of soda
* One medium egg

Method:

1. Begin by melting butter with a pinch of salt in a saucepan, and stir in a tablespoon of stem ginger syrup.
2. Finely chop the ginger and bundle it into a bowl along with self-raising flour, a tad more salt, and an egg.
3. Next, toss in dashes of cinnamon, golden caster sugar, cardamom, and zest from half an orange.
4. After peeling and grating your carrots, fold them into the mix.
5. Chop up or crush the pistachios using a pestle and mortar and tip them into the bowl too, followed by bicarbonate of soda and the buttery concoction. Combine thoroughly to ensure the mixture is moist but firm.
6. Prepare your baking tray by lining it with parchment paper, then take the dough and form golf ball-sized spheres, you’ll get about 12 to 14 from this batch. Pop them in the fridge to solidify slightly as you prepare the delicious filling.
7. Begin by melting the white chocolate in a bowl over a saucepan of simmering water. Incorporate the rest of the orange zest into the chocolate, along with 165g of full-fat cream cheese, stirring until well combined. Chill this mixture in the fridge to firm up.
8. Next, lightly oil the air fryer basket. Place the whoopie pies in the air fryer and cook at 170C for 12 minutes, or 15 minutes if they are frozen. Alternatively, you can bake the whoopie pies in the oven at the same temperature for the same duration.
9. Once the whoopie pies are fully cooked, set them aside to cool. When they have cooled down, sandwich two balls together with the white chocolate cream cheese filling.
10. Then, simply enjoy your homemade treat!
