Denver is getting a new sustainable hotel this September, with the Populus Hotel set to open its doors on the 18th. This downtown addition is making headlines for its commitment to eco-friendly practices, aiming to be the first carbon-positive hotel in the nation.
The Populus, inspired by Colorado’s iconic aspen trees, will implement a range of sustainable initiatives, starting with its “One Night, One Tree” program in collaboration with the National Forest Foundation. The hotel will also utilize regenerative agriculture, source 100% renewable electricity, and practice zero-waste dining. All food waste will be composted and returned to local farmers, promoting a circular economy.
Designed by the renowned architectural firm Studio Gang, the hotel’s aesthetics mirror the aspen trees, with window shapes reflecting the distinctive dark scars found on the trees’ bark. The Populus will offer a range of amenities, including two dining options led by Executive Chef Ian Wortham, known for his work at Frasca Food and Wine in Boulder and Tavernetta on the 16th Street Mall.
The ground-floor restaurant, Pasque, named after a purple Colorado wildflower, will draw inspiration from the forest floor. Featuring organic shapes, textures, and soft lighting, Pasque will serve breakfast, lunch, and dinner.
For a more elevated dining experience, head to the rooftop bar and restaurant, Stellar Jay. Offering stunning views of downtown Denver, Stellar Jay will focus on live-fire cooking, featuring wild game, farm-raised meats, and fresh seafood. The restaurant is named after a local bird that feeds on Pasque wildflowers and will provide both indoor and outdoor seating, along with a private dining room for special events.
The Populus is set to become a haven for environmentally conscious travelers, providing a unique blend of sustainable luxury and city-center convenience. While the official opening date is mid-September, reservations will not be available until October 1, with nightly rates ranging from $263 to $1,346 for the Mountain Studio Suite.
