Jamie Oliver’s Easy and Flavorful Foil-Baked Salmon Recipe

Jamie Oliver, the renowned chef, has revealed his secret to cooking the most delicious salmon, a recipe he calls “exciting” and shares in his book, ONE by Jamie Oliver. He believes that salmon, being a common fish, deserves a special cooking method to truly unlock its flavor potential. This is where his foil-baked salmon comes in. Not only does this method beautifully steam the fish, but it also allows for the infusion of flavors from a medley of exciting ingredients.

The best part? You can have a satisfying meal ready in just 15 minutes of oven time, making it perfect for busy days.

Here’s what you’ll need:

* 230g jar of roasted red peppers
* 15g smoked almonds
* 400g tin of chickpeas
* 15g flat-leaf parsley
* 30g chorizo
* Two x 150g salmon fillets, skin on, scaled, pin-boned
* Olive oil

Instructions:

1. Preheat your oven to 220°C (425°F/gas mark 7). Place a large sheet of thick tin foil in a roasting tray, leaving half overhanging.

Make the sauce:

Drain the roasted red peppers and blend them with the smoked almonds, most of the chickpeas and their juice, and the parsley stalks (saving the leaves for later). Blitz until you have a smooth sauce. Season with salt and pepper and spoon this sauce into the center of the foil in the tray.
3. Finely slice the chorizo. Make two 1cm-deep cuts into the skin side of each salmon fillet and stuff the remaining parsley leaves into the cuts.
4. Scatter the chorizo and the remaining chickpeas over the sauce, then place the salmon fillets on top. Season with sea salt and black pepper and drizzle with a little olive oil.
5. Fold in the overhanging foil, twist the edges to seal tightly, and bake at the bottom of the oven for 15 minutes, or until the salmon is cooked through.
