Le Squer’s arrival marks a significant moment for La Maison 1888. His passion for cooking took him to Paris, where he earned his first Michelin star at the age of 34 at the renowned Café de la Paix. In 1999, he joined the esteemed Pavillon Ledoyen, contributing to its three-Michelin-star status. He then went on to replicate this achievement at Le Cinq, the celebrated restaurant at the Four Seasons Hotel George V in Paris.
