Who doesn’t crave a warm, comforting bowl of soup when the weather turns chilly? As the seasons change, it’s the perfect time to embrace the kitchen and whip up some delicious soup creations. And with countless recipes available, the possibilities are endless. The beauty of soup lies in its simplicity. Most often, all you need is to chop some vegetables and let them simmer in broth until tender. For my first soup of the season, I decided to try a viral recipe I stumbled upon on TikTok. This broccoli cheddar soup boasts a whopping 12 million views and thousands of likes, and for good reason! Shared by @cookwithauds, this recipe looked like the perfect indulgent comfort meal to enjoy throughout fall and winter. Packed with nutrients from broccoli and carrots, and boasting the indulgence of a generous helping of cheddar cheese, it checked all the boxes for a satisfying and comforting meal. And after making it myself, I can confidently say this soup has taken the top spot of the best soups I’ve ever made. It was incredibly easy, incredibly flavorful, wonderfully indulgent, and yielded plenty of portions – which tasted even better the next day! The chef in the video opted to top her soup with crispy bacon for an extra kick of flavor. Here’s everything you need to make this delicious soup (which makes four portions) and the step-by-step process you need to follow.

Broccoli Cheddar Soup Recipe

Ingredients:

* 1 white onion * 5-6 cloves of garlic * Olive oil * 3 tablespoons butter * Salt, pepper, onion powder, and garlic powder * 1/4 cup flour * 4 cups chicken broth * 1/2 cup semi-skimmed milk * 1/2 cup half & half (or substitute with single cream) * 2 cups cheddar cheese * 1 head of broccoli * 3 shredded carrots

Prep Your Vegetables:

Dice the onion, crush the garlic, roughly chop the broccoli (including the stalk), and grate the carrots. 2.

Start the Soup:

In a large pot with a lid, add a generous drizzle of olive oil and the butter. Melt over medium heat. Add the onions and cook for a couple of minutes, stirring frequently. Season with salt, pepper, garlic powder, and onion powder (I used about a teaspoon of each). 3.

Add Garlic and Flour:

Stir in the garlic and cook for about 30 seconds. Add the flour. This is where I think I went slightly wrong – I didn’t add enough, so the soup didn’t thicken as much as I’d like. 4.

Cook the Broth:

Stir in the chicken broth (I used two vegetable stock cubes dissolved in 800 ml of boiling water). Cover the pot and simmer on medium-low heat for 15 minutes. 5.

Make Garlic Bread (Optional):

While the soup simmers, preheat your oven to bake some garlic bread for the perfect accompaniment. 6.

Add Milk, Cream, and Cheese:

After 15 minutes, add the milk and cream to the pot. Slowly stir in the grated cheddar cheese (I used about 250 g of extra mature cheddar, reserving some to sprinkle on top later). Season to taste. 7.

Add the chopped broccoli and grated carrots to the pot. Cover and cook for another 10 minutes, or until the broccoli is tender. 8.
