* 750g white potatoes, peeled and chopped
* 568ml semi-skimmed milk
* 520g frozen white fish fillets
* 300g frozen mixed vegetables, plus 400g for serving

Start by heating the milk in a saucepan over medium heat.

Add the frozen fish fillets and cook with the lid on for seven minutes, allowing the fish to steam. Cover and turn off the heat, letting the fish rest for five minutes. Remove the fish with a slotted spoon and place it in an ovenproof dish.

Place them in a pot of salted water and bring to a boil. Cook for 10-12 minutes until tender. Drain well and let them steam dry for a few minutes.

Add 150ml of the fish milk to the drained potatoes and mash until smooth.

Add 250ml of cold water to the saucepan with the remaining milk. Off the heat, whisk in the flour. Over medium heat, whisk constantly and vigorously, bringing the mixture to a simmer. Continue whisking until the sauce thickens (2-4 minutes).

Crumble in the stock cube and stir in the frozen mixed vegetables. Cook for another two minutes.
