For those eager to experience the authentic flavors of Día de Muertos, we’re sharing an exclusive Pan de Muerto recipe from the renowned Mexican restaurant, Metzi. Led by chefs Luana Sabino and Eduardo Ortiz, Metzi offers a taste of Mexico in every dish, capturing the essence of the country’s rich culinary heritage.

Here’s what you’ll need:

* 500g Wheat flour
* 150g Levain or 5g Dry yeast
* 2g Salt
* 125g Refined sugar
* 3 Egg yolks
* 1 Whole egg
* 160g Butter
* 260ml Milk
* 10g Orange zest
* 5ml Orange blossom water

Instructions:

If using dry yeast

, dissolve it slowly in the milk.
2. In a stand mixer, gradually add the flour and, using the paddle attachment, slowly incorporate the milk and yeast mixture, eggs, orange zest, sugar, orange blossom water, and salt. Mix until a smooth dough forms.
3. Add half of the butter and beat well. Let the dough rest for 15 minutes.
4. Add the remaining butter, knead for 2 minutes, and let the dough rest for another 15 minutes.
5. Shape the dough into 40g balls (or desired size). The dough will double in size.
6. After resting, knead again and divide the dough into three portions. One portion will form the main circle of the bread, another will form the ball representing the skull, and the third will be shaped into a cross to represent the bones.
7. Assemble your Pan de Muerto, letting the dough rise in a greased baking pan for about an hour.
8. Brush the bread with beaten egg and bake in a preheated oven at 180°C (350°F) for 20-25 minutes, until golden brown.
9. Once cooled, brush with melted butter and sprinkle with sugar.
