Ingredients:
* 1 tbsp sunflower oil
* 8 spicy pork sausages
* 4 rashers smoked bacon, finely chopped
* 1 onion, sliced
* 1 red pepper, seeds removed and cut into large chunks

* 300ml chicken stock
* 400g tin chopped tomatoes

Instructions:

Start by browning:
Heat the sunflower oil in a large deep frying pan or casserole dish over high heat. Add the sausages and cook until nicely browned all over. Set aside the sausages once they’re cooked.2.
Add the bacon:
Add the chopped bacon to the pan and fry for a few minutes until it crisps up beautifully. Set the bacon aside with the sausages.3.
Sauté the vegetables:
Add the sliced onion, chopped red pepper, diced carrot, and crushed garlic to the pan and cook for about five minutes over high heat. This will bring out their natural sweetness and aromas.4.
