In a groundbreaking culinary collaboration, Atlantis Dubai and the esteemed Major Food Group (MFG) are set to bring the iconic CARBONE restaurant to the shores of Dubai in 2025. Nestled within the opulent Atlantis The Royal resort, CARBONE will make its highly anticipated debut in the Middle East, offering its signature world-class, New York-style Italian cuisine for the first time in its storied history.
A decade ago, when CARBONE first opened its doors in downtown Manhattan, it was immediately celebrated as an instant classic, injecting a vibrant burst of energy into the city’s dining scene. The New Yorker called the restaurant’s food “absolutely perfect,” while the New York Times described it as “a fancy red-sauce joint as directed by Quentin Tarantino.” Quickly, the CARBONE brand experienced a meteoric rise, expanding globally and solidifying its status as one of the most influential contemporary restaurants worldwide.
CARBONE’s cuisine celebrates the rich heritage of mid-century, New York-style Italian dining while employing the highest level of culinary technique to enhance classic dishes like Caesar Salad, Linguini Vongole, Chicken Scarpariello, and Veal Parmesan, elevating them to new heights. These celebrated dishes, including the iconic Spicy Rigatoni, will be featured on the Dubai menu.
Guests will be immersed in a lavish dining space that evokes 1950s New York glamour, complete with velvety jewel-tone nooks, damask-upholstered walls adorned with Venetian glass mirrors, an exquisite collection of fine art, and a vibrant terrace. CARBONE Dubai will join a portfolio of eight other locations around the world, including Hong Kong, Las Vegas, Miami, Dallas, Doha, Riyadh, and two in New York City.
