There’s nothing quite like perfectly scrambled eggs for breakfast. While they seem simple to make, it’s easy to mess up the temperature and timing, resulting in rubbery, undercooked eggs. But chef Jenn Segal, founder of Once Upon A Chef, has a secret recipe for the ‘best’ scrambled eggs that guarantees success and prevents burning.
Segal’s secret is a simple addition: cornstarch. She explains, “By adding a little cornstarch and milk to the eggs, you get delicate scrambled eggs that could rival a posh five-star brunch in no time at all!” The cornstarch stabilizes the protein in the eggs, preventing them from coagulating too quickly and helping them retain moisture. This ensures the eggs cook more evenly and creates a creamy, soft texture, even if left on the stove for a bit longer.
Here’s how to make perfect scrambled eggs in just one minute:
Ingredients:
* Six eggs
* Three tablespoons of milk
* Two teaspoons of cornstarch
* Two tablespoons of unsalted butter
* Quarter teaspoon of salt
* One teaspoon of chives (optional)
Method:
1. In a medium bowl, whisk together the milk and cornstarch until the cornstarch dissolves completely and no lumps remain.
2. Add the eggs and salt, and whisk until thoroughly combined.
3. In a non-stick pan, melt the butter over medium heat. Once the butter begins to bubble, pour in the egg mixture.
4. Allow the egg mixture to set around the edges for about 30 seconds, then use a rubber spatula to gently pull the edges inward, letting the uncooked eggs flow towards the center of the pan.
5. Cook for an additional 30 seconds, then pull the set edges towards the center again.
6. Continue cooking using this stirring technique for 60 to 90 seconds more, until the eggs appear set and soft, but still slightly undercooked. Remove from heat.
7. Segal advises, “They will continue to cook, so best not to wait until they are fully cooked to take them off the heat.”
8. Transfer the scrambled eggs to a plate, bowl, or a piece of buttery toast. Sprinkle with chives, if desired, and serve immediately.
Enjoy your perfect, one-minute scrambled eggs! You’ll never want to make them any other way again.
