For the Base
* 125g coconut flour
* 113g cup almond butter
* 62g cup plant-based milk
* 3 tbsp rice malt syrup
* 1 tbsp coconut oil
For the Caramel
* 170g smooth almond/cashew/peanut butter
* 85g cup rice malt syrup
* 85g cup coconut oil
* 1 tsp vanilla extract
For the Chocolate Layer
* 200g dark chocolate
* 1 tbsp coconut oil
Let’s Get Started
1.
Prepare the Base:
Line a square brownie tin with parchment paper. In a bowl, combine all the base ingredients and mix well until everything is thoroughly combined. Press the mixture into an even layer in the tin and place it in the freezer to set while you prepare the caramel.2.
Make the Caramel:
In a small saucepan, combine all the caramel ingredients and heat over low to medium heat. Stir continuously as the mixture begins to bubble. Once bubbling, remove from heat and allow it to cool to room temperature.3.
Assemble the Bars:
Pour the cooled caramel evenly over the set biscuit base in the tin. Return the tin to the freezer for 30 to 60 minutes, or until the caramel layer is completely set.4.
Melt the Chocolate:
Melt the dark chocolate with the coconut oil in the microwave or in a heatproof bowl over a saucepan of simmering water (ensure the bowl doesn’t touch the water).5.
Dip and Finish:
Once the caramel has set, slice the bars into rectangles. Dip each rectangle into the melted chocolate, double-dipping for an extra layer if desired. Place the bars back into the fridge or freezer for a minute or two to set the chocolate.6.
