Easy Cinnamon Rolls: A Delicious Treat for Afternoon Tea

Cinnamon rolls, with their gooey sweetness and irresistible aroma, have become a beloved treat for many. Ingredients:

For the dough:

* 300g self-raising flour
* Two tablespoons of caster sugar
* One teaspoon of ground cinnamon
* 70g butter, melted
* Two egg yolks
* 130ml milk

For the filling:

* One teaspoon of ground cinnamon
* 55g light brown soft sugar
* Two tablespoons of caster sugar
* 40g butter, melted

For the icing:

* 60g icing sugar
* One tablespoon of cream cheese
* Half a teaspoon of butter
* Half a teaspoon of vanilla

Instructions:

1. Begin by preheating your oven to 180C or 160C Fan. Grease a 20cm loose-bottomed cake tin and line it with parchment paper.
2. In a bowl, combine the flour, caster sugar, and cinnamon, along with a pinch of salt.
3. In a separate bowl, whisk together the melted butter, egg yolks, and milk until a soft dough forms.
4. Turn the dough out onto a floured surface and roll it into a rectangle approximately 30cm by 25cm.
5. In a separate bowl, combine the filling ingredients: cinnamon, brown sugar, caster sugar, and melted butter. Spread this mixture evenly over the dough.
6. Roll up the dough lengthways like a Swiss roll to form a log. Cut the log into eight even-sized slices.
7. Arrange the slices in the prepared cake tin, brushing them gently with extra milk.
8. Bake for 30 to 35 minutes, or until the rolls are golden brown.
9. Remove the tin from the oven and allow it to cool for five minutes before removing the rolls from the tin.
10. For the icing, sift the icing sugar into a large bowl. Add the cream cheese and butter. Pour in two tablespoons of boiling water and stir to mix, adding more water if you desire a runnier consistency.
11. Stir in the vanilla extract. Drizzle the icing over the warm or cold cinnamon rolls, and enjoy!
