Eggs are a staple in most kitchens, but where to store them is often debated. While some keep them in the cupboard, arguing they aren’t refrigerated in supermarkets, others swear by the fridge. While UK eggs are generally safe in the cupboard due to vaccination against salmonella, an expert from Sam Hill Farmstead recommends refrigeration for optimal freshness.

Kelly, the food-preserving expert, emphasizes the importance of a cool, steady temperature for egg storage. She states, “Fresh eggs that are washed are good in the refrigerator for up to two months or longer!” This extended shelf life is attributed to the fact that supermarket eggs are already a month old by the time they reach consumers.

“Farmers have 30 days to pack and distribute their eggs for sale after they are laid. After that, they have another month to be sold from the grocery store shelves,” Kelly explains. Eggs stay fresh for months when stored at a consistent temperature of 4°C or lower, preventing condensation that attracts bacteria and leads to spoilage.

Supermarkets keep eggs on shelves rather than in fridges to avoid temperature fluctuations during transport and storage. While fridges significantly extend freshness, eggs can be kept dry on a countertop for a few weeks. However, they won’t last as long as refrigerated eggs.

Kelly highlights the protective ‘bloom’ on eggshells that seals pores to keep bacteria out. “Fresh, unwashed eggs can remain on the counter at room temperature for up to two weeks. If they get wet or are washed in any way, they need to be refrigerated,” she explains.

Regardless of storage preference, keeping eggs pointed end down maximizes freshness. The larger end contains an air cell, and positioning the pointed end down keeps the air cell at the top, preventing contact with the yolk. This minimizes moisture loss and preserves freshness. The pointed end is also believed to have smaller pores, further reducing moisture loss.
