Expert Reveals the Best Way to Store Garlic for Maximum Freshness

Garlic, a culinary staple, adds a vibrant flavor to countless dishes. But keeping it fresh for extended periods requires proper storage. Vlatka Lake, a storage expert from Space Station, shares her top tips for maximizing garlic’s lifespan.

Whole Garlic Storage

Contrary to common practice, storing whole garlic bulbs in the refrigerator is not recommended. This is because the cold environment can trigger sprouting and bitterness, ultimately reducing the garlic’s shelf life. To preserve its freshness, keep whole bulbs intact, with their papery skins intact. Breaking them apart can accelerate drying and shorten their lifespan. Store the bulbs in a cool, dry place with good air circulation, such as a pantry or cupboard. Using a basket or bowl for storage is preferred over plastic bags, as they trap moisture and can lead to spoilage.

Peeled and Chopped Garlic Storage

For peeled or chopped garlic, refrigeration is the ideal method. Wrap peeled cloves in plastic wrap or store them in an airtight container. When storing chopped garlic, keep it in a small airtight jar or sealed bag and use it within three days. Chopped garlic can discolour as it ages, indicating spoilage.

Freezing Garlic

For long-term storage, freeze garlic for up to 12 months. To freeze whole cloves, peel them and spread them out on a baking sheet to freeze solid. Once frozen, transfer them to a sealable bag for storage. Chopped garlic can be frozen in ice cube trays with a little water, making it easy to add directly to dishes when needed.
