His secret? A simple baking sheet with a rack. The chef recommends placing unwashed potatoes side by side on the rack, emphasizing the importance of keeping the skin intact and avoiding any moisture.
“Don’t wash the potatoes; don’t disrupt the skin of the potatoes, and definitely don’t put moisture on [them] before you store them,” he advises. He then places the sheet pan with the potatoes in a kitchen drawer.
