Unlike traditional jacket potatoes, this creation involves peeling the skin off. Max explains, “It’s basically like a jacket potato but without the skin, so it’s essentially a roast potato but just a massive one.”

The process is remarkably simple. Begin by boiling a whole peeled potato with aromatic herbs like rosemary and thyme and a hint of garlic. After approximately 10 minutes, drain the potato and allow it to steam dry. Gently shake it to create ruffled edges.

Next, drizzle some oil over the potato and sprinkle it with salt. You can then choose to cook it either in an air fryer or an oven at 200°C (392°F) for about half an hour.

“It should come out nice and crispy like this,” says Max. “It had a little bit of a weird marking on the bottom due to the air fryer, but that’s all good, it still tasted amazing and that’s on the bottom anyway.”

“I cooked some pigs in blankets to go on top, then sliced open the potato, went on top with a whole bunch of butter – nice healthy serving of that,” he describes. “As you can see, the bottom is nice and crispy just like a roast potato.”

Complete your masterpiece with a sprinkle of Max’s SPG (salt, pepper, and garlic), more pigs in blankets, a touch of honey, and a final flourish of rosemary and thyme. Adding a bit of gravy brings the dish to a satisfying conclusion.
