* Five medium eggs, separated
* 50g caster sugar
* One tsp vanilla extract
* 60g self-raising flour
* 30g cocoa powder
* 1⁄2 tsp baking powder
* 25g milk chocolate

1. Preheat your oven to 190°C (fan 170°C/gas mark 5). Line a 20cm x 20cm baking tin with some baking paper.
2. Place a large heatproof bowl over a pan of boiling water, ensuring the bowl doesn’t touch the water. Turn off the heat. Add the egg whites and sugar to the bowl and beat until stiff peaks form.
3. Add the egg yolks and vanilla extract to the bowl and whisk for 2-3 minutes until the mixture becomes thick and glossy.
4. Remove the bowl from the heat and sift in the flour, cocoa powder, and baking powder. Gently fold in the dry ingredients using a metal spoon.
5. Pour the batter into the prepared tin, giving it a slight shake to level it out. Bake for 10-12 minutes, or until the sponge is risen and set. Allow it to cool slightly.
6. Meanwhile, melt the chocolate in a heatproof bowl set over a pan of gently simmering water (again, ensure the bowl doesn’t touch the water), stirring occasionally.
7. Drizzle the melted chocolate evenly over the sponge and let it cool slightly.
8. While the cake is cooling, prepare your Slimming World custard (recipe not included).
9. Cut the sponge into 8 equal portions and serve with the hot custard.
