Lemon curd tart is a beloved summer treat, renowned for its bright, citrusy filling and light texture. Now, you can easily recreate this classic dessert in just 30 minutes with Jamie Oliver’s simple five-ingredient recipe, serving six with a surprising twist. The renowned chef infuses his signature touch by creating a textured, flavorful pastry, drawing inspiration from the techniques of Portuguese and French pastry chefs.
Sharing the recipe on his official website, Jamie enthuses, “Many wonderful desserts in the Med celebrate the bounty of citrus. I’ve embellished this lemon tart by rolling and flavouring pastry to create amazing texture, as the Portuguese and French do so well.”
Ingredients:
* 120 g icing sugar, plus extra for dusting
* 320 g sheet of ready-rolled puff pastry (cold)
* Five lemons (120ml juice total)
* Four large free-range eggs
* 150 g raspberries
Instructions:
1. Preheat your oven to 190°C (375°F or gas mark 5).
2. Sprinkle icing sugar over a clean work surface, then unroll the puff pastry, discarding the paper. Sprinkle the pastry with more icing sugar and finely grate the zest of two lemons on top.
3. Roll the pastry tightly and slice it into one cm thick discs.
4. Lightly coat a 24cm non-stick, oven-safe frying pan with olive oil. Arrange the pastry discs on the bottom and sides of the pan, pressing them together firmly to form a single layer.
5. Bake in the lower part of the oven for about 20 minutes, or until the pastry turns a light golden color.
While the pastry bakes:
1. Finely grate the zest of the remaining lemons into a large heatproof bowl and squeeze in the juice, aiming for 120ml.
2. Whisk in the icing sugar and eggs.
3. Place the bowl over a pot of simmering water on medium heat, whisking constantly for about 10 minutes until the mixture thickens.
4. Remove from the heat.
To finish:
1. Pour the lemon curd into the baked pastry shell.
2. Place the tart under a hot grill for a few minutes to finish. If the pastry edges start to darken too much, cover them with tin foil.
3. Allow the tart to cool to room temperature before serving, garnished with a few fresh raspberries on top and the rest on the side.
