Oliver’s recipe blends cinnamon’s distinctive flavor with a zesty lemon touch. When prepared as instructed, you’ll have 15 servings, perfect for sharing with friends or enjoying at a later time. This recipe was tested in a 4.2-liter air fryer, but results may vary depending on your air fryer’s size.
Ingredients:
* 85g unsalted butter
* 20g golden syrup
* 1/2 a lemon
* 140g self-raising flour
* 100g porridge oats
* 100g golden caster sugar
* One level teaspoon ground cinnamon
* 1/2 teaspoon bicarbonate of soda
* 50g sultanas
Instructions:
1. Melt the butter and golden syrup over low heat in a pan or in the microwave on high (800W).
2. Finely grate the lemon zest into a large bowl, then add the remaining ingredients.
3. Pour the melted butter mixture into the bowl and stir until well combined. Mix in one tablespoon of water.
4. Divide the mixture into three portions, rolling each portion into five equal-sized balls (totaling 15 balls).
5. Slightly flatten each ball with the palm of your hand. You can freeze the balls at this point if you prefer to bake them later.
6. Place the balls in the air fryer, leaving a one centimetre space between them (you may need to do this in batches).
7. Cook at 175°C for 15 minutes.
8. Carefully remove the basket or shelf and let the cookies cool for five minutes.
9. Place the cookies on a wire rack to cool completely while you prepare the remaining batch.
