You’ll need boiling water for the couscous.*
Heat a large frying pan:
Set it to medium-high heat for cooking the chicken.*
Grab a food processor:

The Couscous

Prepare the couscous:
In a bowl, combine one mug of couscous with two mugs of boiling water, along with a pinch of salt. Cover the bowl and let it sit.2.
Prep the vegetables:
Remove the stalk and seeds from the peppers and chilli. Pulse them in the food processor along with the trimmed spring onions and dill until finely chopped. Spread the mixture onto a large tray or platter.3.
Add the remaining ingredients:
Add the cooked peas to the vegetables. Tear in the olives and squeeze over the juice of the zested lemon. Drizzle with the extra virgin olive oil.4.
Combine and season:
Fluff up the couscous and toss it with the vegetable mixture. Season to taste. (For ease, you can mix everything together in the saucepan with the cooked couscous.)The Chicken

Season and flatten:
On a large sheet of greaseproof paper, toss the chicken with salt, pepper, oregano, allspice, and finely grated lemon zest. Fold over the paper and bash the chicken to 1.5cm thick with a rolling pin.2.

Heat two tablespoons of olive oil in the frying pan. Add the chicken and cook for three or four minutes per side, until golden brown and cooked through.The Tzatziki

Use a box grater to coarsely grate the cucumber. Sprinkle with a pinch of salt and squeeze out any excess salty water.2.
Combine the ingredients:
In a bowl, combine the grated cucumber with the yoghurt, juice of half a lemon, a pinch of pepper, and chopped fresh mint. Mix well.Assembly and Serving
