Here’s what you’ll need:

* 250g self-raising flour
* Olive oil
* One red onion
* Half a red pepper
* Half a 400g tin of chopped tomatoes
* 50g mature Cheddar cheese
* Half a butterhead or round lettuce
* One carrot
* Red wine vinegar

Get ready to cook:

1. Combine the flour and a pinch of salt in a bowl. Gradually add 150ml of cold water, stirring with a fork until it forms a dough ball. Knead the dough for just one minute on a lightly floured surface and set aside.
2. Heat a 30cm frying pan over medium heat with one tablespoon of olive oil. Meanwhile, peel and finely slice the onion and pepper. Add the onion and pepper to the pan and season with salt and pepper. Cover the pan with a lid and cook for two minutes, or until golden, tossing occasionally.
3. While the vegetables are cooking, roll out the dough into a round shape that fits the pan, about half a centimeter thick.

5. Drain some of the liquid from the chopped tomatoes and mash lightly with a fork. Spread the mashed tomatoes over the cooked dough, leaving a small gap around the edges.
6. Scatter the cooked vegetables and cheese over the tomato sauce. Reduce the heat, cover with a lid, and cook for another three to four minutes.
7. While the pizza is cooking, make a side salad with the carrot, lettuce, red wine vinegar, and olive oil. Toss the salad ingredients together.
8. Carefully slide the pizza onto a board, slice, and serve with the salad.
