2 tbsp olive or sunflower oil, 500g boneless and skinless chicken thighs (chopped), ½ red chilli (deseeded and finely chopped), 2 large garlic cloves (crushed), 200g button mushrooms (sliced), 200g baby spinach, 2 tsp cornflour, 200g crème fraîche, 1 tbsp freshly chopped flatleaf parsley*
Sauce:
400g tin chopped tomatoes, 2 tbsp sun-dried tomato paste, 1 tbsp chopped thyme leaves, salt and freshly ground black pepper*
To assemble:
6 sheets of fresh lasagna, 150g cheddar (grated)Instructions:

Preheat oven to 200°C (180°C fan/gas mark 6).

Make the chicken mixture:
Heat the oil in a frying pan over high heat. Add the chicken pieces and fry quickly until golden brown but not cooked through. Add the chilli, garlic, and mushrooms, and fry for a few minutes. Stir in the spinach until wilted. In a small bowl, whisk together the cornflour and 2 tablespoons of water until smooth. Add the crème fraîche and parsley to the pan with the chicken and stir. Pour in the cornflour mixture and stir until thickened. Set aside.3.
Make the sauce:
Combine the tomatoes, sun-dried tomato paste, and thyme in a bowl. Season with salt and pepper and mix well.4.
Assemble the lasagna:
Soak the lasagna sheets in a shallow dish of boiling water for a few minutes until soft. Spoon a third of the chicken mixture into a 1.8-liter ovenproof dish. Top with a third of the tomato sauce. Arrange three lasagna sheets on top. Repeat the layers twice more. Finish with a final layer of chicken mixture, sauce, and sprinkle with grated cheddar.5.
