Mary Berry, the beloved British chef, has shared a simple and delicious recipe for cranberry and coconut cereal bars. This foolproof recipe is easy to follow, making it perfect for both novice and experienced bakers.
The recipe, featured in her book “Mary Berry’s Foolproof Cooking,” requires just four steps and less than 10 minutes of cooking time. According to BBC Food, these bars are “great for a packed lunch or eating on the go.” While not exactly low in sugar, they are sure to be a crowd-pleaser.
Ingredients:
* 200g softened butter
* 200g light muscovado sugar
* 100g golden syrup
* 50g sunflower seeds
* 50g dried cranberries, chopped if large
* 100g sultanas
* 50g desiccated coconut
* 100g crisped rice cereal
* 150g rolled oats
Instructions:
1. Line a 23x30cm (9x12in) traybake tin with cling film.
2. Combine the butter, sugar, and golden syrup in a large saucepan. Stir over medium heat until the mixture melts.
3. Pour the melted mixture into a large bowl and stir in the remaining ingredients until well combined.
4. Transfer the mixture to the prepared tin and spread evenly with the back of a spoon. Chill the tin, uncovered, in the refrigerator for about two hours or until the mixture is firm.
Once set, remove the mixture from the tin and cut it into 18 evenly sized bars. Store the bars in an airtight container until ready to use. The bars can be made up to three days in advance, making them a great option for meal prepping.
With their combination of sweet and nutty flavors, Mary Berry’s cranberry and coconut cereal bars are a delicious and convenient snack option for any time of day.
