Mary Berry herself calls this dish a “firm favourite,” and it’s easy to see why. The salmon, sauce, and vegetables all cook together in one roasting tin, making it a simple and efficient meal. The best part? It only takes 10 minutes of prep time before spending 20 minutes in the oven.
Here’s what you’ll need to bring this vibrant dish to life:
* Six salmon fillets
* One red chili
* One large garlic clove
* One cauliflower
* One knob of root ginger (around six centimetres)
* Juice of two limes
* 400ml of full-fat coconut milk
* 150g of baby courgettes
* One tablespoon of honey
* Two tablespoons of red Thai paste
* Two tablespoons of fish sauce
* Two romano peppers
* Three banana shallots
* Two tablespoons of olive oil
* Thai basil or coriander
* Salt and pepper
Let’s get cooking!
1. Preheat your oven to 220°C (200°C fan or Gas Mark 3).
2. Prepare your vegetables by finely chopping the courgettes, chili, cauliflower, peppers, and banana shallots. Crush the garlic and grate the ginger.
3. In a small bowl, combine the coconut milk, chili, garlic, ginger, lime juice, fish sauce, and Thai paste. Mix well and season with salt and pepper.
4. Place the cauliflower florets, peppers, and shallots in a large roasting tin. Add one tablespoon of olive oil and toss everything together to ensure even coating.
5. Pour half of the sauce into the roasting tin, season with salt and pepper, and drizzle with honey.
6. Roast in the oven for 12 to 15 minutes until the vegetables begin to turn golden brown.
7. Remove the tin from the oven and add the salmon and courgettes. Pour over the remaining sauce and return to the oven for another 10 minutes until the salmon is cooked through.
8. Once everything is cooked, sprinkle with Thai basil or coriander for a final touch of freshness.
