Here’s what you’ll need for the pumpkin spice latte cake:

For the Cake:

* 281 grams all-purpose flour, spooned and leveled
* 1 teaspoon pumpkin pie spice
* 1.5 teaspoons baking powder
* 1/4 teaspoon baking soda
* 1/2 teaspoon salt
* 140 grams unsalted butter, softened
* 300 grams granulated white sugar
* 2 eggs
* 1 teaspoon vanilla extract
* 120 ml buttermilk
* 244 grams canned pumpkin puree

For the Latte Soak:

* 1/4 cup espresso or strong coffee
* 80 ml whole milk
* 150 grams sweetened condensed milk
* 1/4 teaspoon pumpkin pie spice
* 1 teaspoon vanilla extract

For the Espresso Cream Cheese Frosting:

* 224 grams unsalted butter, softened
* 226 grams cold cream cheese
* 260 grams powdered sugar
* 1.5 teaspoons vanilla extract
* 2 teaspoons instant espresso powder
* 1.5 teaspoons pumpkin pie spice

Instructions:

1. Preheat oven to 180°C (350°F). Grease a 9×9 inch metal baking pan and line with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice.
3. In a large bowl, cream together the softened butter and granulated white sugar for two minutes.
4. Add the eggs and vanilla extract to the butter mixture and mix until pale and smooth.
5. Stir in the buttermilk and canned pumpkin puree.
6. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
