Ingredients:

* 150g dried pasta (any kind)
* 150g broccoli, cut into small florets
* 1 tablespoon olive oil
* 4 spring onions, trimmed and sliced (or 12 small onions, very finely sliced)
* 2 skinless salmon fillets (around 120g each), cut into 3cm chunks
* Pinch of dried chili flakes (optional)
* 100ml double cream
* Zest of half a small lemon
* Salt and fresh black pepper

Method:

1.

Get the pasta cooking:

Half-fill a large pan with salted water and bring to a boil. Add the pasta and cook for 7-12 minutes, or according to the packet instructions, until just tender, stirring occasionally.
2.

Add the broccoli:

Three minutes before the pasta is cooked, add the broccoli to the pan and let it cook along with the pasta for three minutes.
3.

Saute the salmon:

While the pasta and broccoli are cooking, heat the olive oil in a medium non-stick frying pan. Saute the spring onions (or sliced onions) for 1-3 minutes, or until softened, stirring regularly. Add the salmon pieces and chili flakes (if using) and cook for about a minute, turning the salmon three to four times.
4.

Create the creamy sauce:

Pour in the double cream and a ladleful of the pasta cooking water (around 100ml). Season generously with salt and pepper. Bring the pan to a gentle simmer and cook the salmon for 3-4 minutes, turning occasionally. If the sauce is thickening too quickly, add a splash of water (but don’t overdo it!).
5.

Combine and serve:

Drain the pasta and broccoli and return them to the pan. Add the creamy salmon sauce and lemon zest and combine everything together. Enjoy your delicious and easy salmon and broccoli pasta!
