Ingredients:

* 35g salted butter
* 2 cloves of garlic, crushed
* 1 tbsp parsley, finely chopped
* 340g ready rolled croissant dough
* 6 tsp pesto
* 12 tbsp grated mozzarella Parmesan

Method:

1. Begin by melting butter in a saucepan over low heat. Stir in the crushed garlic and let it simmer gently for a minute or two before incorporating the parsley. Give the mixture a thorough stir, then take it off the heat and set it aside.
2. Preheat your oven to 180C fan setting. Get two baking trays ready and line them with baking or parchment paper.
3. Separate your croissant dough into individual triangles. Take one triangle and brush one side of it with the garlic parsley butter, followed by a teaspoon of pesto.
4. Next, place two tablespoons of grated mozzarella in the centre of the wider end of the triangle. Roll the croissant from the wider end towards the thinner end, ensuring the thin point is at the bottom to prevent it from popping up during baking. If any cheese has fallen out, simply tuck it back in.
5. Place the prepared croissant on a baking tray, and repeat the process with the remaining croissant dough.
6. Brush the top of each croissant with the remaining garlic butter. Grate some parmesan over the top of the croissants.
7. Bake the croissants in the preheated oven for 10 to 15 minutes until they turn golden brown. Once done, remove them from the oven and let them cool for a minute, then dig in!
