* Salt and freshly ground black pepper

To Serve:
* 200g Basmati rice, boiled according to pack instructions
* Indian naan bread or chapati
* Yoghurt
* 1-2 tablespoons finely chopped fresh coriander

Combine the chopped onion, garlic, ginger, and curry powder in a food processor or bowl. Blend until smooth, adding four tablespoons of water, four tablespoons of vegetable oil, salt, and freshly ground black pepper.2.
