To achieve this perfect egg, you’ll need a pan with a lid. First, heat the pan over medium heat and add a small knob of butter to grease it. Place the lid on the pan and let the butter melt before cracking the egg into the pan. The key is to quickly cover the cracked egg with one teaspoon of cold water. Replace the lid and let the steam do its magic.
Ken claims that this method allows the egg to “cook perfectly” and that the steam creates the desired texture for the yolk, which he says “will be perfect.” No flipping is required with this method, as the steam within the pan does the work for you.
You can even cook multiple sunny-side eggs at once. Just add one teaspoon of water per egg. For over-easy eggs, cook for an additional 30 seconds to a minute to ensure the white is cooked through while maintaining a runny yolk. Over-medium and over-well eggs can also be cooked using this method by adjusting the cooking time accordingly.
