## Turn Leftover Roast Dinner into Crispy Air Fryer Pasties: A Delicious and Easy Recipe

These delectable treats take less than 30 minutes to prepare and only 10 to 30 minutes to cook, serving up to four people. Here’s what you’ll need:
For the pastry:
* 275g flour (plus extra for dusting)
* 150g unsalted butter
* One free-range egg
For the filling:
* 375g leftover roast vegetables (potatoes, swede, carrots, etc.)
* 75 to 100g leftover roast beef or chicken
* 100ml beef gravy or mix
* 100ml hot beef stock with two tsp cornflour
* One free-range egg, beaten
* One tbsp mustard, horseradish or cranberry sauce (optional)
* Salt
* Freshly ground black pepper
Let’s get cooking!
To make the pastry:
1. Combine the flour, butter, and a pinch of salt and pepper in a food processor and blend until it resembles fine breadcrumbs.
2. Add the egg and one tablespoon of water, then pulse to combine. Add more water, one tablespoon at a time, until the dough comes together.
3. Wrap the pastry in cling film and refrigerate for 20 minutes.
To prepare the filling:
1. Mix the leftover roast vegetables, meat, and gravy in a bowl. Taste the seasoning and add salt and pepper as needed.
To assemble the pasties:
1. Lightly dust a work surface with flour and roll out the pastry to a thickness of 5mm.
2. Use a side plate or small upside-down bowl to cut the pastry into 4 circles with a diameter of 18cm.
3. Divide the filling between the rounds, spooning it onto one half of the circle.
4. Brush the edges of the pastry with beaten egg.
5. Fold over one half of the round to create a half-moon pasty shape. Press the edges together firmly to seal.
6. Use a fork or crimp the pastry edges in your desired style.
7. Brush the pasties with the egg wash.
To bake the pasties:
1. Preheat your air fryer to 180°C.
2. Place the pasties in the base of the air fryer tray. Bake in two batches if necessary.
3. Bake for 15 to 20 minutes, or until the pastry is golden brown.
