Turn Your Roast Dinner Leftovers Into Delicious Yorkshire Pudding Wraps

A roast dinner is a delicious treat, but the abundance of food can often lead to a mountain of leftovers. Instead of throwing them away, try this simple recipe for Yorkshire pudding wraps, shared by chef and food influencer Hayley Dean in her book, *How To Make Anything In An Air Fryer*. While Hayley’s recipe features roast beef, you can easily adapt it to use any leftover meat or vegetables from your roast.

Ready in just 20 minutes in the air fryer, these wraps use only a few ingredients and are best enjoyed smothered in leftover gravy.

Yorkshire Pudding Wrap Ingredients (Serves one)

*For the Yorkshire pudding wrap:*
* 1 egg
* 70ml semi-skimmed milk
* 30g plain flour
* 15 sprays vegetable spray oil
* Salt and freshly ground black pepper

*To serve:*
* 1 tablespoon horseradish sauce
* 2 slices of roast beef
* 4 roast potatoes
* Your favorite gravy

Method

1. Combine the egg, milk, and flour in a bowl and whisk until smooth. Season with a pinch of salt and pepper. Let the batter rest for at least 30 minutes or overnight in the fridge.

2. Preheat your air fryer to 180°C (355°F).

3. Use a foil tray or cake tin that fits in your air fryer. Add the vegetable oil to the tray and place it in the air fryer for 5 minutes to heat up.

4. Pour the batter into the tray. It should sizzle. Cook in the air fryer at 180°C for 20 minutes. Do not open the air fryer during this time.

5. Remove the Yorkshire pudding from the air fryer. Turn it over and flatten it. Spread the horseradish sauce over the flattened Yorkshire pudding, then add the sliced roast beef, roast potatoes, and gravy. Roll up the Yorkshire pudding and wrap the ends in foil.

6. Serve with a jug of extra gravy for pouring.
